Spiced Feta in Olive Oil

Ingredients

  • 3/4 olive oil
  • juice of 2 lemons
  • leaves from 2 sprigs of thyme
  • 1/2 tsp. dried red chili flakes
  • 1/2 tsp. fennel seeds
  • 1/2 tsp. black peppercorns
  • 1/2 tsp. white peppercorns
  • 9 oz. feta, broken into chunks

Preparation

Step 1

1. Mix the olive oil with the lemon juice, thyme and chili flakes. Put the fennel seeds and both types of peppercorns in a mortar and crush them lightly so that the spices are bruised and partly broken. Add to olive mixture.

2. Put the feta into sterilized jar (make sure it is not piping hot, but let it cool to warm or the feta will start to melt), and pour the oil & lemon mixture over it. Seal and keep in the refrigerator. Make sure the feta is always covered w/a layer of oil and eat within 2 weeks.
