Lemon Squares

Ingredients

  • Crust:
  • 1/2 Cup Powdered Sugar
  • 2 Cups Flour
  • 1 Cup Melted Unsalted Butter
  • Filling:
  • 4 Eggs
  • 2 Cups Sugar
  • 4 Tablespoons Flour
  • Pinch of Salt
  • 1/2 Cup Fresh Lemon Juice

Preparation

Step 1

Mix crust ingredients together with a fork. Mixture will easily come together into a ball.

Press mixture into an ungreased 9 x 14 pan (approx) coming up onto the side of the pan about 1/2". Bake in preheated 350 degree oven until golden brown (approx 15-20 minutes) Turn the pan halfway through the baking time to bake evenly.

While the crust is cooking:

Mix filling ingredients together and beat with electric mixer on high for approx 1-2 minutes.

Pour mixture on top of baked crust and bake for an additional 20-25 minutes, until top is set. Cool and then sift powdered sugar over the top and cut into squares or bars.
