Ingredients
- 7 lbs crown roast of pork (14-16 ribs)
- salt and pepper

Step 1
Place roast on rack in shallow pan, rib bones up. Season with salt and pepper. Wrap rib bones in foil. Make a ball of aluminum foil and press into the middle to keep cavity open.
Roast uncovered in 325 oven for 2 hours. Bast occasionally with pan juices. Remove from oven. Remove foil and fill center with stuffing. Cover stuffing with small piece of foil. Place meat thermoneter in thickest part of meat, not touching bone. Roast an additional 3/4 to 1-1/2 hours or until meat thermoneter registers 160. Place roast on carving board. Allow roast to rest 10 minutes. Remove foil. Bone ends may be covered with paper frills, cherry tomatoes or large grapes. Slice between ribs to serve.
