Baked Zucchini Fries With Yogurt Dressing

Ingredients

  • For the zucchini:
  • 1 medium zucchini
  • 1 cup of breadcrumbs
  • 2 tablespoons of grated Parmigiano cheese
  • 2 teaspoons of dried herbs (I used Herbs de Provence)
  • 1/2 teaspoon of grated dried garlic
  • salt
  • pepper
  • 2 tablespoons of milk
  • 1 egg
  • For the yogurt dressing:
  • 1/2 cup of buttermilk
  • 5 tablespoons of Greek low fat yogurt
  • 1 tablespoon of freshly minced parsley
  • 1 tablespoon of minced dill
  • 1/2 teaspoon of grated dried garlic
  • 1/2 teaspoon of dried onion
  • salt
  • pepper

Preparation

Step 1

Pre-heat the oven (400°F/200°C).

Cover a baking pan with baking paper and spray some oil on it.
In a bowl, mix the breadcrumbs, cheese, dried herbs, garlic powder, salt and pepper.

Cut the zucchini in sticks – I cut the zucchini in three parts and then cut in sticks.

In another bowl, beat the egg lightly with the 2 tablespoons of milk. Coat the zucchini sticks into this mixture and then in the breadcrumbs mixture, putting them on the baking paper you prepared forming a single layer.

Bake for 30 minutes or until they brown.
