Turkey & Cannellini Ragu

Ingredients

  • 1 cup quinoa (or brown rice)
  • 1 3/4 cups water (divided)
  • 2 tsp extra virgin olive oil
  • 1 lb ground turkey (93/7)
  • 1/4 tsp salt and pepper
  • 1 small onion (diced)
  • 1 tsp oregano (2 tsp fresh)
  • 1 15 oz can diced tomatoes (drained)
  • 1/2 tsp minced garlic
  • 1 15 oz can cannellini (white kidney) beans (rinsed and drained)

Preparation

Step 1

In large saucepan, heat quinoa and 1 1/2 cups of water to boiling. Reduce heat, cover, and cook 15 minutes or until liquid is absorbed.
*If using brown rice, prepare as directed.

In large skillet, heat oil on medium heat. Add ground turkey and onion. Salt and pepper. Cook until turkey is no longer pink. Add oregano, tomatoes, and garlic. Cook 5 minutes. Add beans and 1/4 cup of water. Cook 2 minutes. Stir quinoa (or brown rice) into turkey mixture. Cook 5 minutes more.
