Ingredients

  • 1 T unsalted butter
  • 1/2 c chopped onion
  • 1 c chopped green bell pepper
  • 2 garlic cloves, minced
  • 4 Roma tomatoes, seeded and chopped
  • 1/2 (16 oz) pkg. crawfish tails
  • 2 c shredded sharp white Cheddar cheese
  • 1 c grated Parmesan cheese
  • 1 1/2 t. salt
  • 1/2 t black pepper
  • 1 loaf French bread, halved lengthwise

Preparation

Step 1

Preheat oven to 450°.
In skillet, melt butter and add onion & cook til translucent. Add bell pepper and cook until softened. Add garlic and cook about 1 minute. Remove from heat, transfer to bowl.
Add tomatoes, crawfish, cheeses, salt, and pepper...combine well. Divide mixture between two bread halves. Bake in oven on baking sheet until cheese is melted (8-10 minutes). Slice into portions, and serve warm.
