Cheese Puffs (appetizers)

Ingredients
- 8 tbsp. (1 stick) butter cut into pieces
- 1 tbsp. Dijon mustard
- 1 cup water
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 cup flour
- 4 large eggs at room temp
- 1 1/2 cup shredded extra sharp cheddar cheese
- 3 tbsp. grated parmesan
- 1 tbsp. chopped fresh thyme

Preparation
Step 1
1. Preheat oven to 375* and line 2 large baking sheets with parchment paper
2. In large sauce pan on medium high heat bring 1 cup water, butter, Dijon mustard, salt & pepper to rolling boil.
3. When butter has melted add flour all at once and stir vigorously with wooden spoon until a sticky ball forms and begins to pull away from sides of pan (3 minutes)
4. Lower heat and cook stirring for 3 minutes
a. remove from heat and transfer to bowl.
b. Let cool 5 minutes
5. Using electric mixer on medium heat beat in 1 egg letting the mixture separate then come back together
a. repeat with remaining eggs
6. Beat in cheeses and thyme
7. Portion dough by tbsp. onto sheets spacing 1 inch apart
8. Bake till golden 25-30 minutes switching pans from front to back and top to bottom half way through.
