Kolaches

Czech recipe from Carl Wanasek -born in 1903. I made changes for a bread machine. I'm sure Carl didn't have the privilege of a bread machine in the early 1900's.

Ingredients

  • 1 pkg dry yeast 1/4 c. warm water
  • 1/2 c. butter,melted
  • 1 c. milk
  • 2 eggs
  • 1/4 c. sugar
  • 3/4 tsp salt
  • 1/4 tsp ground mace or nutmeg
  • 3 - 3 1/2 c. flour
  • 1/4 tsp grated lemon peel (optional)

Preparation

Step 1

I mixed the dough in my bread machine on dough setting. Add the ingredients according to your machine instructions.Remove dough from machine. Roll out on well floured board to about 1/4 inch. cut with 3 " cookie cutter. Place on ungreased cookie sheet about 1 inch apart. Let raise about 30 min. Make a round depression about 2 inches in center of each roll. Fill with filling of choice. I like solo apricot, cherry or poppyseed filling. Prune is also delicious. Bake at 400 degrees for 7-10 min. Keep rolls very light. Too brown dries them out.
Filling:

1/2 can Solo Poppy Seed
1 tbsp sugar, rounded
1/4 c. chopped pecans
2 drops lemon extract
1/4 tsp Vanilla
Filling:
1/2 16oz carton dry curd cottage cheese
1 egg yolk
1/4 c. sugar
1/2 c. raisins
1/2 tsp cinnamon
1 tsp vanilla

TOPPING:
1 tbsp butter
1/4 c. flour
1/4 c. sugar
Mix to crumbly stage. Sprinkle on top before baking.
May need more flour.
