Churro Cupcakes

Ingredients

  • 1 box white cake mix
  • 3 eggs
  • 1/3 c oil
  • 1 c water
  • 1/2 pkg sugar free/fat free vanilla pudding mix
  • 4 tsp cinnamon, divided
  • 1 c crushed Cinnamon Toast Crunch cereal, plus 1/4 c cereal, uncrushed
  • 2 cans cream cheese frosting

Preparation

Step 1

1. Preheat oven to 350 degrees. Line 2 muffin pans with paper liners. In large bowl, beat together cake mix, eggs, oil, 2 (two) teaspoons cinnamon and water until well blended. Stir in pudding mix until incorporated. Lastly, stir in crushed cereal pieces completely. Divide evenly into muffin tins and bake, approximately 13-15 minutes or until toothpick inserted in center comes out clean. Cool completely.

2. Spoon frosting into large bowl and stir in additional 2 teaspoons of cinnamon. Scoop frosting into piping bag or spread onto cooled cupcakes. Top cupcakes with one cereal square, or crush additional squares and sprinkle crumbs on tops of cupcakes.
