El Dorado Beef Casserole

  • 1/2 lb ground beef
  • 1 medium-sized onion, chopped
  • 2 (8 oz) cans tomato sauce
  • 1 cup water
  • 1/4 teaspoon chili powder
  • 1 (9 oz) package tortilla chips, coarse lay crushed
  • 1 cup sour cream
  • 1 cup (4 oz) shredded Monterey Jack cheese

Preparation

Step 1

Preheat oven to 375 degrees. Coat a 1 1/2 quart casserole dish with cooking spray.

In a large skillet, brown ground beef and onion over medium-high heat for 5 minutes. Add tomato sauce, water, and chili powder; mix well. Reduce heat to medium-low and simmer 2 to 3 minutes, or until thickened.

Spread one-third beef mixture in casserole dish then top with one-third of the crushed tortilla chips, one-third of the sour cream, and one-third of the cheese. Repeat layers two more times, ending with cheese.

Bake 25 to 30 minutes, or until bubbly and top is golden.
