Paleo Turkey Burgers

Ingredients

  • Meyer Lemon-Honey Mustard:
  • 1/4 cup Dijon mustard (WE USED SPICY MUSTARD CAUSE IT'S PALEO)
  • 1 heaping tablespoon clover honey (not paleo)
  • 1/2 teaspoon lemon zest
  • 1 tablespoon fresh orange juice
  • 1 teaspoon fresh Meyer lemon juice, from Meyer lemons, if possible
  • Salt and freshly ground black pepper
  • 2 pounds freshly ground turkey (93 percent lean)
  • Salt and freshly ground black pepper
  • 8 slices goat cheese, sliced 1/2-inch thick ( WE USED HAVARTI) not paleo
  • Avocado and any other topping you want (shrooms etc)
  • Meyer Lemon-Honey Mustard
  • Canola

Preparation

Step 1

Mustard:

Whisk together all ingredients, in a small bowl. Cover and refrigerate for at least 30 minutes and up to 24 hours to allow flavors to meld

Burgers:

Preheat the grill to high. (I cooked on low - med) Form the meat into 5 (8-ounce) burgers. Season the burgers on both sides with salt and pepper and rub canola oil all over. Grill until cooked through, about 3 to 4 minutes on each side. (I did about 5 - 6 min on each side) During the last minutes of cooking add slices of cheese to each burger, cover the grill and let the cheese soften slightly, approximately 1 minute. Drizzle with some of the mustard on top of the burger add avocado and fixings. I added mustard on the bottom of the place and put the burger on top :)
