Ingredients

  • 6 - 8 large broccoli crowns
  • 2 cartons vegetable stock (Smart & Final vegetable base works well too)
  • 2 pealed russet potatoes
  • 8 oz cheddar cheese
  • Salt & pepper to taste

Preparation

Step 1

Mix all together in large pot, cover and heat until broccoli and potatoes are very soft. Let cool and then put into a blender or food processor to blend.
