Ingredients
- 2 lbs baby red potatoes - cut into 1/2" pieces
- 1/4 cups olive oil
- 1 tsp fresh lemon juice
- 1 tbls minced garlic
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbls chopped fresh parsley
- 1 tbls chopped fresh thyme

Preparation
Step 1
Preheat oven to 350.
Cut potatoes and set aside. In a large bowl, coat the potatoes with olive oil and add all other indreients and toss.
Spread potataoes out on a baking sheet and cook until tender.
