Garlic Roasted Baby Red Potatoes

Ingredients

  • 2 lbs baby red potatoes - cut into 1/2" pieces
  • 1/4 cups olive oil
  • 1 tsp fresh lemon juice
  • 1 tbls minced garlic
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbls chopped fresh parsley
  • 1 tbls chopped fresh thyme

Preparation

Step 1

Preheat oven to 350.

Cut potatoes and set aside. In a large bowl, coat the potatoes with olive oil and add all other indreients and toss.

Spread potataoes out on a baking sheet and cook until tender.
