Irish Beef Stew for the crockpot- (11 ww pts)

Ingredients

  • 3 tablespoons olive oil
  • 2 pounds beef chuck, cut into 1 1/2-inch cubes
  • 1/3 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 TBSP worcestershire sauce
  • 1 TBSP Dijon mustard
  • 1 pound carrots, peeled and cut into 1-inch chunks (4 lg)
  • 2 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1/2 tsp dried thyme
  • 3 large potatoes, peeled and cut into bite size pieces
  • 1 onion, chopped
  • 2 stalks celery chopped
  • 2 1/2 cups beef broth
  • 1 (6 ounce) can tomato paste
  • 1 (12 fluid ounce) can or bottle Irish stout beer (e.g. Guinness®)

Preparation

Step 1

Heat oil in a large skillet over medium heat( or on saute mode in slow cooker). Toss beef cubes with flour, salt and pepper to coat, then fry in the hot oil until browned. Can be done in two batches if preferred.

In a small bowl stir together worcestershire, mustard, garlic, rosemary and thyme. Drizzle over the beef.

Add the carrots, potatoes, celery and onion. Pour in the beef broth and the beer.
Cover and cook on low for 10-12 hours or Low for 4-6 hours.
