Slow Cooker Shredded Chicken Taco Meat

Ingredients

  • 2 - 2-1/2 lbs. boneless skinless chicken breasts
  • 1 - 15 oz can diced tomatoes and chilies
  • 1/2 cup water
  • 3 Tbls. Penzeys Chicken Taco Seasoning (or taco seasoning of your choice)

Preparation

Step 1

In a 3-4 qt slow cooker, mix tomatoes and chilies, water and taco seasoning. Add chicken breasts and make sure the chicken is immersed in the liquid. Cook 5-6 hours on low. Shred chicken with forks when tender. Can use in tacos, enchiladas, or other quesadillas. Meat also freezes well. Be sure to add a little more cooking liquid if you plan on freezing it.
