Biggest Loser Carribean Salad

A healthy yummy salad with ground turkey and mango. What a great combination!!

Ingredients

  • You will need:
  • Caribbean Salad
  • 4 whole-wheat tortillas
  • 1 package Jennie-O Turkey (extra lean ground)
  • 1 package 30% less sodium taco seasoning mix
  • 2 tbsp. water
  • 1 mango, chopped
  • 3/4 cup chopped red bell pepper
  • 3 tbsp. chopped green onions
  • 3 tbsp. chopped fresh cilantro
  • 1 tsp. lime zest
  • 2 cups firmly packed fresh spinach leaves

Preparation

Step 1

Heat oven to 425 degrees. Use ten ounce custard cups and invert them. Spray them with olive oil cooking spray as well as one side of each tortilla.

Place tortillas oil side up over the cups. Bake in oven for four to six minutes until the tortillas are lightly browned.

Brown turkey meat in a medium skillet. Add the taco seasoning to this meat after it has been cooked along with the water. Once the taco seasoning has become thicker, it's time to move onto the next step for this "The Biggest Loser" recipe.

In a bowl, stir together mangos, red peppers, green onions, cilantro and lime zest. This will make the salsa for this recipe. Place the taco shells on serving plates. Divide the spinach leaves between the shells and add cooked turkey and salsa.
