Ingredients

  • 8 oz dry soba noodles or somen
  • 3/4 cup shredded carrots
  • 1/2 c chopped peanuts
  • 1/4 cup chopped green onion
  • 1 TBS toasted sesame seeds
  • Dressing
  • 6 TBS rice vinegar
  • 4-6 TBS sugar
  • 1/4 cup soy sauce
  • 1/4 cup sesame oil

Step 1

Cook noodles and drain well. Add other ingredients and toss.
Mix together dressing and pour over pasta. Mix well, cover with foil or saran and refrigerate for a minimum of 1 hr.
