Ingredients

  • 6 ears of corn - shucked
  • 1 tbls salt
  • 1/2 cup heavy cream
  • 2 tbls butter - cut into chunks
  • 1/4 cup grated parmesean cheese
  • White pepper to taste

Preparation

Step 1

Boil corn in 8 cups water and add salt. Boil until tender (10 - 15 minutes). Remove and let cool.

Add cream to sauce pan and reduce by 1/3 over low heat.

Cut cooled kernels from cob and set aside.

Remove reduced cream from heat and whisk in butter, parmesan cheese and pepper. Fold in corn kernelss and serve.
