It is party time! This festive drink, flavored with cream of coconut and four fruit juices, including pineapple and lime, is so refreshing, you will feel like you are on a tropical island vacation!

Ingredients

  • 1/2 can (15 oz) Coco Lopez sweetened cream of coconut
  • 1-1/2 cups fresh lime juice
  • 1-1/2 cups fresh lemon juice
  • 1 can (46 oz) pineapple juice
  • 3 cups cranberry juice
  • 2 bottles (750 ml) vodka
  • 2 cups Simple Syrup
  • 1 pint fresh strawberries, stemmed and pureed
  • 1 liter soda water, chilled, about 4 cups
  • Fresh strawberries to garnish

Preparation

Step 1

In large container that will hold at least 1-1/2 gallons, whisk Coco Lopez with a little lime juice (to thin out Coco Lopez) until smooth.

Add remaining lime, lemon, pineapple, and cranberry juices, vodka, simply syrup, and strawberry puree.

Whisk until thorouoghly combined.

Transfer to clean plastic jugs or bottles; refrigerate until needed, for up to 1 week.

When ready to serve, shake bottle to remix ingredients. Pour mixture into large punch bowl. Stir in soda water. Serve in ice-filled glasses and garnish with fresh strawberries.


To make simple syrup --
Mix 2 cups water and 2 cups sugar in saucepan.

Bring to boil over medium-high heat; boil 1 minute; remove from heat.

Cool. Store in clean glass bottle or container at room temperature, for up to 2 weeks or refrigerated for up to 3 months.
