Marmalade Glazed Chicken Thighs

Ingredients

  • 8 boneless skinless thighs
  • salt and pepper
  • 2 Tbsp butter unsalted
  • 2 Tbsp oil
  • 1/2 cup orange marmalade
  • 1 Tbsp Dijon mustard
  • 2 tsp lemon juice

Preparation

Step 1

1. Set oven rack to 6 inches from broiler and preheat to high
2. Season meat with salt and pepper
3. Melt butter with oil in oven safe skillet on medium high
4. Add thighs and cook till golden on both sides (4 minutes per side), remove to plate.
5. Combine marmalade, mustard and lemon juice.
6. drain fat out of skillet and add marmalade mixture.
7. Return thighs to pan and turn to coat
8. Place pan in oven and cook through turning often. Serve with sauce.
