Twice Baked Sweet Potatoes with Cheddar & Bacon

Ingredients
- 4 medium sweet potatoes scrubbed
- 4 slices bacon
- 6 oz shredded cheddar (2 cups)
- 1/2 cup sour cream
- 1/4 cup chopped chives
- 2 plum tomatoes seeded and chopped
- salt and pepper

Preparation
Step 1
1. Preheat oven to 425* and line baking sheet with foil
a. Pierce potatoes all over with fork
b. Microwave on high until tender 12-14 minutes turning onve
c. let cool slightly
2. In large skillet medium high heat cook bacon until crisp
a. let drain on paper towel
b. let cool then crumble
3. Cut a thin slice off top of each potato and discard
a. spoon insides of potatoes into bowl
b. stir in 3/4 cup cheese and all the sour cream, chives, bacon and tomatoes
c. season with salt and pepper
d. spoon back into potato skins (filling will mound up high)
e. place on baking sheet and sprinkle tops with cheese
f. Bake until cheese golden brown (10 minutes)
