Vegetable bread

Ingredients

  • 1 medium broccoli
  • 1 handful fresh spinach
  • 50 ml hazelnuts
  • 100 ml sunflower seeds
  • 100 ml milled flax seeds
  • 2 tbsp psyllium husk powder
  • 3 eggs
  • small handful of fresh basil
  • pinch cayenne pepper
  • 2 tsp herb salt

Preparation

Step 1

Chop nuts and seeds in food processor to a coarse flour.

Cut broccoli into smaller florets and rinse thoroughly together with the spinach.

Add the vegetables to the seed and nut mixture in the food processor and pulse until finely chopped.

Add psyllium husk powder together with herbs and spices. Pulse again until all is well mixed. Let rest for 10 minutes.

Spoon the mixture onto baking sheet covered with non-stick baking paper. Flatted and shape with wet fingers.

Bake in 170C/ 340F for 20-25 minutes
