Dilled Potatoes with Feta

Ingredients

  • 1 LB sm. red potatoes, halved
  • 1 C (4oz) crumbled feta cheese
  • 1/4 C snipped fresh dill
  • 2 TBL olive oil
  • 1 TBL lemon juice
  • 1/4 tsp salt
  • 1/4 tsp pepper

Preparation

Step 1

place potatoes in lg. saucepan & cover w/ water
bring to boil
reduce heat
cover & cook for 10-15 min or until tender
drain

in serving bowl, combine cheese, dill, oil, lemon juice, S & P
add potatoes & toss gently to coat
