Ingredients

  • 8 Egg Whites
  • Pinch salt
  • 2 cups castor sugar
  • 2/3 cup granulated sugar
  • 3 TBS cornflour
  • 3 teas lemon juice

Step 1

Beat Egg whites with salt until peaks form then add castor sugar one tablespoon at a time(30 seconds before adding another tablespoon). Once all the sugar has been added beat for 10 minutes and combine granulated sugar with cornflour and fold into meringue mix with lemon juice. Spoon mixture on to a 25cm circle of non stick baking paper and place in a preheated over of 150deg. Reduce temperature to 110deg and cook for 2 hours. Turn off and allow to cool in oven.
