Ingredients
- 1/2 c bread crumbs-salt and pepper to taste
- 2 skinless boneless chicken breasts ,quartered
- 2 T olive oil
- 1 (14 oz) can chicken broth
- 1 (8 oz) can white mushrooms drained, or fresh sauteed
- 1 (14 oz) can of artichokes, quartered
- 1/2 c grated parmesan cheese
- 1 pkg pasta or rice

Preparation
Step 1
Mix bread crumbs, salt and pepper in plastic bag, add chicken and shake bag until coated.
Heat 2T olive oil in frying pan, saute chicken until brown, turning at least twice, about 10minutes.
Remove chicken from pan and pour chicken broth in, stir with wooden spoon until brown bits come loose.
Place chicken in 9 x 12 baking dish. Add mushrooms and artichokes, pour broth over chicken.
Bake at 350 for 45 minutes uncovered. 5 minutes before removing from oven sprinkle with parmesan cheese.
Serve over rice or pasta
