Grilled Pizza with Pesto, Tomatoes, and Feta

Dazzle your guests, and keep the kitchen cool, by baking pizza on the backyard grill. For convenience, use Pita bread for this recipe, and pesto from a jar.

Ingredients

  • 1 package(s) Pita bread left whole, preferably whole-wheat
  • 1/2 cup(s) prepared pesto
  • 4 ripe plum tomatoes, thinly sliced
  • 1/2 cup(s) crumbled feta cheese
  • Freshly ground pepper, to taste
  • 1/4 cup(s) lightly packed fresh basil leaves, torn

Preparation

Step 1

Heat grill to medium-high or you can bake Pita breads using a pizza pan in the oven until crispy.

Carry Pitas and toppings out to the grill.

Feel free to change up the cheese if Feta isn't for you! Any shredded cheese would be delicious!

Lay Pitas on grill. Cover grill and cook until Pitas are lightly toasted. The more toasty or charred, the crispier they will be. Yum!!!

Using tongs, flip crusts. Immediately spread pesto over crusts. Top with tomatoes. Sprinkle with feta and pepper. Cover grill and cook until the undersides are lightly browned, about 3 minutes more. Sprinkle with basil and serve immediately.

If toasting in the oven, add toppings after flipping Pitas.
