Bacon and Cheese Frittata

Ingredients

  • 8 oz bacon chopped
  • 12 large eggs
  • 2 tbsp. water
  • 2 tbs pmilk
  • 1 cup crumbled feta
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 4 scallions thinly sliced
  • 1 cup shredded cheddar cheese

Preparation

Step 1

1. Preheat oven to 350* and spray 8 inch square baking dish
2. In large skillet on medium heat cook bacon until crisp.
a. remove to paper towels to drain
3. In medium bowl beat eggs, milk, and 2 tbsp. water
a. add feta, salt, pepper, 1/2 of bacon and all but 2 tbsp. scallions
4. Pour mixture into baking dish and bake 15minutes until almost set
5. Remove from oven and sprinkle cheddar and rest of bacon.
a. put back into oven and bake 5-7 minutes more.
