Ingredients
- 12 cups beef broth
- 1 large can (28 oz) crushed tomatoes
- 1 can (7 oz) diced green chiles
- 1 large onion, chopped
- 1 1/2 teaspoons dried basil
- 1 1/2 teaspoons dried oregano
- 1/2 to 1 teaspoon liquid hot pepper sauce
- 1/2 cup white rice
- Frozen meatballs
- 1/2 cup cilantro, chopped
- Salt and pepper to taste
Preparation
Step 1
In a large pan, combine broth, tomatoes, chiles, onion, basil, oregano and pepper sauce. Season to taste and bring to a boil over high heat.
Add rice, cover and simmer for 15 minutes.
Add frozen meatballs (or fresh if you have), and cook until meat is cooked through and hot, at least 165F. Add the cilantro and mix well.
Garnish with avocados and cheese, if desired.
