Tomato and White Bean Soup

Ingredients
- 2 tbsp. oil
- 1 onion chopped
- 1 rib celery chopped
- 2 carrots chopped
- 1 tbsp. tomato paste
- 2 15oz cans white beans drained and rinsed
- 3 cups chicken broth
- salt and pepper

Preparation
Step 1
1. Heat oil in large pot on medium high heat. Add onion, celery and carrots and cook stirring frequently (5minutes)
2. Stir in tomato paste and beans.
3. Add chicken broth and season with salt and pepper
4. Increase heat to high and bring to a boil.
5. Reduce heat to medium and simmer until veggies are soft (10 minutes)
6. Remove from heat
7. Working in batches, puree soup until thick but still chunky. Return to pot and simmer over medium heat .
If soup is to thick, thin with additional chicken broth
