Black Bean Soup

Ingredients

  • 1 1/2 tsp canola oil
  • 1 medium onion diced
  • 3 cloves garlic diced
  • 1 medium red bell pepper seeded and diced
  • 4 carrots diced
  • 3 ribs celery thinly sliced
  • 1 tbsp. chili powder
  • 1/2 tsp cumin
  • 6 cups chicken broth
  • 4 15oz cans black beans drained and rinsed
  • salt and pepper
  • 6 tbsp. greek yogurt (optional)
  • 2 tbsp. chopped cilantro (optional)

Preparation

Step 1

1. Warm oil in large pot on medium high heat. Add onion, carrots, garlic, bell pepper and celery. Cook, stirring occasionally until soft (12 minutes). Add chili powder and cumin and sauté 3 minutes
2. Stir in broth and beans and bring to boil. Reduce heat to low and simmer 25 minutes stirring occasionally
3. Remove 2 cups of soup and puree in blender and then stir back into pot and cook 5 minutes. Season with salt and pepper
4. Serve with yogurt and cilantro to top as desired.
