Tomato Soup

Ingredients
- 2 tbsp. unsalted butter
- 1/2 onion chopped
- 2 carrots chopped
- 2 ribs celery chopped
- salt and pepper
- 3 28 oz cans whole peeled tomatoes undrained
- 2 1/2 cups chicken broth
- 1 cup sour cream
- 1 cup milk

Preparation
Step 1
1. Melt butter in large pot on medium low heat
2. Add Onion, celery and carrots and sprinkle with salt and pepper
3. Cover and cook till tender (10 minutes)
4. Add tomatoes and broth and raise heat to high to bring to boil
5. Reduce heat to medium and simmer till tomatoes are breaking up.
6. Remove from heat and let cool slightly
7. Working in batches ladle soup into blender and cover but leaving vented blend until smooth. Pour into large bowl and continue.
8. Add soup back into pot and add sour cream and milk and warm over medium heat until hot but not boiling.
