Peanut Butter and Jelly Bars

  • 3 c flour
  • 1 1/2 teas salt
  • 1 teas baking powder
  • 2 sticks butter softened
  • 1 1/2 c sugar
  • 2 large eggs
  • 2 1/2 c peanut butter
  • 1 teas vanilla
  • 1 1/2 c strawberry jam
  • 1/2 c chopped peanuts



Step 1

Prepare a 9x13 pan by buttering the bottom and then lining with parchment paper, butter the parchment paper, and then flour, shaking out excess.

Mix flour, salt, and baking powder, and set aside. In a stand mixer, cream butter, sugar, 2 large eggs, peanut butter, and vanilla until well mixed. Add dry ingredients and mix well. Put 2/3 of mixture in the prepared pan, and spread evenly. Top with the jam, flour your hands and drop pieces of the remaining dough over the jam, covering the surface. Sprinkle with chopped peanuts.

Bake at 350 degrees for 45 min. Cool and cut into squares.
