Dessert - Tapioca Pudding

Ingredients

  • 4 cups milk
  • 1/3 cup sugar
  • 1/4 t salt
  • 2 egg yolks, beaten

Preparation

Step 1

Mix together in pan to cook on.

After mixing, add 6 T tapioca and let mixture set 5 minutes. Beat two egg whites stiff and add 1/3 cup sugar - beat thoroughly and set aside.

Cook milk mixture over medium heat, stirring constantly until it comes to full, rolling boil. (Takes about 7 minutes)

Pour hot tapioca into egg whites and beat about 1 minute. Add 1 1/2 t vanilla. Chill, but stir about every 20 minutes in refrigerator. Will thicken in an hour.
