Succulent Summer Squash

Ingredients

  • 1/4 cup butter
  • 1/2 cup sliced green onion
  • 1.5 lbs. yellow squash, sliced 1/4" thick
  • 2 tomatoes, peeled and diced
  • Salt and cracked pepper, to taste

Preparation

Step 1

Cook onion in butter until just tender. Stir in squash; cover and cook until tender, about 5 minutes. Add tomatoes; cover and cook 1 minute to heat through.
Season to taste.
