Ingredients
- 2 cups self-rising cornmeal
- 1 cup self-rising flour
- 1/2 teaspoon salt
- 3 tablespoons sugar
- 3 large eggs, lightly beaten
- 1 (16-1/2 ounce) can cream-style corn
- 1/2 cup milk
- 1-1/2 cups (6 ounces) shredded Cheddar cheese
- 1 large onion, chopped
- 2 jalapeno peppers, seeded and chopped
- Vegetable oil
Preparation
Step 1
Combine first 4 ingredients in a large bowl. Combine eggs, corn, and milk, add to dry ingredients, stirring just until dry ingredients are moistened. Stir in cheese, onion,a nd pepper (do not over stir batter).
Pour oil to depth of 2 inches into a Dutch oven, heat to 375 degrees. Drop batter by rounded tablespoonfuls into hot oil, fry hush puppies, a few at a time, 3 minutes or until golden, turning once. Drain on paper towels. Yields: 3-1/2 dozen.
