Double Bran-Banana Muffins

Ingredients

  • 1/2 cup. low-fat sour cream
  • 1 //2 cup. mashed ripe banana
  • 1/2 cup. skim milk
  • 1/3 cup. sugar
  • 2 Tbs. vegetable oil
  • 1 tsp. vanilla
  • 1 egg, lightly beaten
  • 1 1/2 cups. All-Bran cereal
  • 3/4 cup. all-purpose flour
  • 1/2 cup. oat bran
  • 1 tsp. baking powder
  • 3/4 tsp. baking soda
  • Cooking Spray

Preparation

Step 1

Combine first 7 ingredients in a bowl; stir well with a wire whisk. Add cereal; stir well. Let stand 10 mins.

Combine flour and next 3 ingredients in a large bowl;
make a well in center of mixture. Add cereal mixture to
dry ingredients, stirring just until moistened. Divide
batter among 12 muffin cups coated with cooking spray.

Bake at 400* for 16 mins or until a wooden pick inserted in center comes out clean. Remove from pan immediately; let cool on a wire rack.
