This was very easy to make. I varied a little from the recipe, mainly omitting the peanuts. I made this for my son's daycare class and wanted to be on the safe side. I used both corn and wheat Chex and also added raisins, along with the other ingredients. I was careful microwaving the brown sugar mixture and landed up not microwaving the entire mixture at the end due to not having a large microwavable bowl. It still turned out great. I landed up bringing in leftovers to work and my co-workers loved it!
Tasty, easy and fun! My 8 year old daughter helped me make it - great use of her math skills. We made 3 batches very quickly. I didn't have the problem with the marshmallows melting but I only microwaved 1 minute at a time, stirred, then microwaved 1 more minute. I think this helps the marshmallows cool a few seconds in between. The last batch we made we left out the peanuts and sauce and its still a great snack mix for toddlers.
I love this recipe and love to play with it! I always use the lucky charms and the pretzles but will use a cereal instead of nuts and another cereal instead of chex mix. Also I only microwave the cereal mixture for 1 min.
