Ingredients
- Sauce:
- 1 cup raisins
- 1/2 cup water
- 1/2 cup corn oil plus 1 tablespoon
- 1/2 cup superfine sugar
- 1/2 cup ground almonds
- 2 eggs, lightly beaten
- 1 1/2 cup self-rising flour
- 1/2 cup walnuts, chopped
- 2/3 cup ground almonds
- 1 1/4 cups low-fat milk
- 4 tablespoons sugar
Preparation
Step 1
Put raisins and water in small saucepan. Bring to boil then remove from heat and cover. Let steep for 10 minutes then drain.
Whisk together oil, sugar, and ground almonds until thick & syrupy (about 8 minutes with an electric mixer). Add eggs, one at a time, beating well after each addition.
In a separate bowl combine flour and raisins. Stir into batter.
Coat a 4 cup heatproof bowl with oil or line with parchment paper.
Transfer mixture to prepared bowl and set aside.
Put all sauce ingredients into a small saucepan. Bring to boil, stir, reduce heat and simmer for 10 minutes. Pour hot sauce over batter in bowl.
Place bowl on cookie sheet. Bake at 350 degrees for about 1 hour or until well risen. If top gets too brown cover with parchment paper until fully risen.
Let cool 3 minutes then turn bowl out onto serving dish.
