Ingredients

    cup heavy cream

  • 1/2

    teaspoon cayenne pepper

  • 1

    tablespoon salt

  • 1

    quart chicken broth

  • 4

    cups sliced yellow squash (about 3 medium)

  • 2

    carrots sliced or 1 cup frozen corn

  • 2

    medium white potatoes, sliced

  • 1/2

    cup butter

  • 1

    cup chopped onion

Directions

Saute the onion in butter until translucent. Add the vegetables, broth, salt and cayenne pepper. Cook, covered, over low heat for 45 minutes. Puree in batches in blender and return to saucepan. Stir in cream and adjust seasonings. Cook until heated through, DO NOT boil.
