Ingredients
- 1 pound boneless skinless breast cut into 1 inch chunks
- 2 tbsp. olive oil
- 1/2 tsp ground coriander
- 1/2 tsp oregano
- 1 pint grape tomatoes
- 2 garlic cloves chopped
- 3 tbsp. lemon juice
- shredded lettuce
- 4 scallions sliced on diagonal
- 1/2 cup fresh dill
- Pita Bread
Preparation
Step 1
1. In a bowl toss chicken with 1 tbsp. oil then coriander and oregano, 1/4 tsp of salt and pepper each and put on skewers
2. Place tomatoes and garlic on large pieces heavy duty foil and drizzle with 1 tbsp. oil and 1/4 tsp of salt and pepper each
3. Fold foil into a pouch leaving room to shake tomoatoes
4. Cook skewers 8-10 minutes on grill with tomatoe pouch shaking ocassionally.
5. Brush skewers with lemon juice
6. in bowl toss lettuce, scallion and dill with 2 tbsp. lemon juice and 1 tbsp. oil
Serve with warmed pita
