Ingredients
- 3 tablespoons butter
- 3 tablespoons flour
- 3/4 cup milk
- 3/4 cup cheddar cheese, shredded (or Swiss, Monterrey Jack...use your favorite)
- 1 tablespoon mustard (grey poupon type)
- 4 slices bacon, cooked and crumbled
- 4 eggs, separated

Preparation
Step 1
1. Preheat oven to 350 degrees.
2. Melt butter in medium saucepan on medium heat.
3. Stir in flour.
4. Cook 1 minute.
5. Gradually add milk, stirring until well blended.
6. Cook and stir until mixture comes to a boil.
7. Remove from heat.
8. Add cheese, stiring until melted.
9. Stir in mustard and bacon.
10. Cool slightly.
11. Stir in egg yolks, 1 at a time.
12. Beat egg whites with electric mixer on medium heat until stiff but not dry, about 5 minutes.
13. Gently fold into yolk mixture.
14. Pour into 12 lightly greased nonstick muffin cups.
15. Bake 25 minutes or until puffed and set.
