Butternut Squash Kugel

Ingredients

  • 2 lge. butternut squash (frozen squash?)
  • 1/2 C oil
  • 1/2 C sugar or brown sugar
  • 3 eggs
  • `1/2C potato starch

Preparation

Step 1

Peel and cube squash. Cover with water. Bring to a boil and cook until soft.

Drain and mash.

Measure 2 1/2C of mashed squashed. Mix in oil, sugar, and eggs.

Add potato starch to the mixture last and mix well.

Bake in 9x13 inch pan for one hour.
