Ingredients

  • 1 pizza crust
  • 1.5 lb russet potatoes, peeled and cubed
  • 1/2 cup butter divided
  • 1/2 c. milk
  • 1 lg onion, chopped
  • 2 c. mozzerella cheese

Preparation

Step 1

Cook potatoes. Drain and mash with 6 TBSP butter and milk.
Meanwhile, melt the remaining butter in skillet and saute over low heat until onion are carmelized.
Preheat oven to 415F
Roll out pizza dough and place in pan.
Add mashed potatooes and spread to within 3" of base to allow potatoes to spread while baking.
Sprinkle onion and mozzerella on top.
Bake 20 min. until cheese is bubble and has brown spots and crust edges are golden.
Allow to sit 10 min before cutting.
