Ingredients
- 2 Chicken Breasts
- 4 Tbs Light Butter
- 1 Cup Fiber One Cereal
- 3 Egg Whites
- Chopped Garlic
- Thyme
- Italian Seasoning
- Ukrainian Seasoning
- Salt
- Pepper
- Garlic Powder
- Onion Powder
- Powdered Smoke
- Sweet Paprika
- Chili Powder
- Tuscan Seasoning
- Red Pepper Flakes
Preparation
Step 1
1. Combine butter, garlic, thyme, Ukrainian Seasoning, salt and pepper. Mix throughout.
2. Roll into a small log with plastic wrap, and freeze.
3. Butterfly each chicken breast and pound out inside of an cut Zip Lock bag.
4. Season the inside of the breast with Tuscan Seasoning and red pepper flake.
5. Place half of the frozen butter in each breast and close around, pinching tightly.
6. Add Fiber One, garlic powder, onion powder, powdered smoke, sweet paprika and chili powder to a food processor.
7. Chop to a fine consistency.
8. Dip in shallow bowl with the egg wash, then dredge in Fiber One mixture.
9. Place in greased, walled baking sheet.
10. place with the smallest side of the butterflied chicken facing up, make sure there are no openings for the butter sauce to seep out.
11. Bake at 350 for 30 minutes.
