Leek-Potato Soup

Quick, Simply & Easy! A great quick dinner, just serve with rolls.

Ingredients

  • 3 strips bacon, cooked
  • 3 large leeks
  • 1 pound all purpose potatoes, pealed & thinly sliced
  • 1 1/4 cup onion, diced
  • 1/2 teaspoon thyme
  • 1/4 teaspoon pepper
  • 5 cups chicken broth

Preparation

Step 1

Clean leeks and trim tough green ends then dice. Add leeks & onion to heated saucepan with 1 teaspoon oil or bacon grease, cook 5 minutes. Add potatoes, broth, pepper & thyme. Bring to boil, reduce heat to low, cover & simmer 30 minutes or until tender. Puree in blender or food processor. Serve topped with crumbled bacon.
