Hawaiian Wedding Cake

A family favorite that is great year round.

Ingredients

  • Cake:
  • 2 eggs
  • 2 cups sugar
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 cup chopped nuts (optional)
  • 12 oz can crushed pineapple (juice & all)
  • Frosting:
  • 1 stick butter
  • 8 oz cream cheese
  • 1 1/2 to 2 cups confectioners sugar
  • 1 teaspoon vanilla

Preparation

Step 1

Cake:
Mix all ingredients in a large bowl by hand, mix well. Pour into greased & floured 13 x 9 pan. Bake at 350 degrees for 40-45 minutes. Frost once cool.

Frosting:
Beat all ingredients until fluffy.

Refrigerate frosted cake covered for up to 1 week.
