Slow Cooker Pulled Pork

Ingredients

  • 1- 3 lb. boneless pork shoulder, fat removed
  • 1 onion chopped
  • 1/2 C low sodium chicken broth or water
  • 2 C bottled barbecue sauce
  • 2 T mustard
  • 2 T honey
  • 1 T soy sauce
  • salt and pepper

Preparation

Step 1

1. Scatter onion over bottom of slow cooker and place pork on top. Add broth, cover and cook on low until very tender, about 8 hrs. Remove meat, let cook.
2. Pull meat into thin shreds, removing any fat.
3. Return meat to slow cooker and stir in barbecue sauce, mustard, honey and soy sauce. Season with salt and pepper. Cover and cook for 1 hr on low.
