Salmon Cream Cheese Cucumber Bites

Ingredients
- 1 large cucumber, peeled and cut into 1/4" rounds (you can also use an English cucumber and not peel it for a pretty green pop)
- 4 ounces smoked salmon, cut into bite sized pieces
- 4 ounces cream cheese, softened
- 1/2 tablespoon horseradish
- 1 tablespoon fresh dill, chopped
- 1/4 teaspoon salt
- Serves 6; double as needed

Preparation
Step 1
Arrange cucumber rounds on a large serving platter.
Cut salmon into bite-sized pieces; set aside.
In a stand mixer or a large bowl beat cream cheese until light and fluffy - this is easiest done with an electrical mixer of some sort. Beat in dill and horseradish. Beat in salt.
Transfer cream cheese into a large ziplock bag with one corner snipped off, or a piping bag.
Swirl a small amount of cream cheese onto each cucumber round.
Add a few pieces of salmon on top of each cream cheese cucumber bite, then insert a tooth pick in the middle.
Serve at once, or chill until serving.
