Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons vegetable oil
  • 3/4 cup freshly grated Parmesan cheese
  • 1/2 cup chopped pecans, toasted
  • 1/2 cup chopped celery
  • 1/3 cup chopped green onions
  • 3/4 cup mayonnaise
  • 2 tablespoons spicy brown mustard
  • 1 garlic clove, pressed
  • Garnish; curly leaf lettuce

Preparation

Step 1

Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over high heat 7 to 8 minutes on each side or until done; cool. Chop chicken.

Stir together chopped chicken, cheese, and next 3 ingredients.

Stir together mayonnaise, mustard, and garlic. Add to chicken salad; stir well. Cover and chill, if desired. Garnish serving plate, if desired.
