Parmesan Chicken Salad

When you blend Parmesan, garlic, toasted pecans, and spicy brown mustard with chopped chicken, you get one fabulous chicken salad. It's even better the second day.

Ingredients

  • 4

    boneless, skinless chicken breasts

  • 1

    teaspoon salt

  • ½

    teaspoon pepper

  • 2

    tablespoons vegetable oil

  • ¾

    cup freshly grated Parmesan cheese

  • ½

    cup chopped pecans, toasted

  • ½

    cup chopped celery

  • cup chopped green onions

  • ¾

    cup mayonnaise

  • 2

    tablespoons spicy brown mustard

  • 1

    garlic clove, pressed

  • Garnish; curly leaf lettuce

Directions

Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over high heat 7 to 8 minutes on each side or until done; cool. Chop chicken. Stir together chopped chicken, cheese, and next 3 ingredients. Stir together mayonnaise, mustard, and garlic. Add to chicken salad; stir well. Cover and chill, if desired. Garnish serving plate, if desired.
